Need Appetizer Recipes/ Ideas for Couples Hangout!?

I am having about 10 couples over on Saturday for a fun Game Night. I want to make 4 to 5 different appetizers in addition to the regular chips and dip. use egg roll wrappers, place them in a cup cake pan (they shape like a taco bowl


then put a teaspoon of sloppy joe meat or taco meat in it will a cheese topping, and bake for 6 minutes until the cheese melts,..boy are they good and fast.

Coconut Fruit Kabobs


Coconut fruit kabobs will please every fruit lover and make a believer out of those who don't like fruit that much (who would that be???) Make them ahead for picnics, BBQs and parties. They are healthy and everyone loves them. Make more than you think you'll need!





What you'll need:


- 1 medium-size red apple (unpeeled)


- 1 medium-size pear (unpeeled)


- 1 Tablespoon lemon juice


- 20 unsweetened pineapple chunks


- 20 seedless red or green grapes


- 20 fresh strawberries (capped)


- Coconut Dressing


- 20 wooden skewers





This simple appetizer takes about 20 minutes to prepare and you can make the kabobs ahead of time and store in the refrigerator.





All you need to do is cut each apple and pear into 20 bite-size pieces. Place the cut fruit in a bowl and toss with the lemon juice gently. Not only does this add great flavor, it keeps the pear and apple bits from turning brown.





Next, alternate an apple, pear, grape, pineapple, and strawberry on a wooden skewer. Do this until all skewers are filled up.





Place skewers on a beautiful platter and put the Coconut dressing in the center. See the recipe for the dressing below.





Coconut Dressing:


- 1 1/2 cup vanilla low-fat yogurt


- 1 1/2 Tablespoon flaked coconut


- 1 1/2 Tablespoon reduced-calorie orange marmalade





Simply combine all the ingredients in a small bowl and stir well. Serve with the kabobs. You can either drip a little dressing on each kabob, or make the dressing available for dipping.

Quick, Easy -N- Fast Recipes Blue Cheese Bites Recipe





1/2 C. butter, softened


2 C. crumbled blue or Gorgonzola cheese


1/4 C. cooked bacon, crumbled


6 slices pumpernickel or dark rye bread


6 slices Swiss cheese


6 slices deli roast beef


6 thin slices red onion


6 dill pickle spears





In a small bowl, beat butter and blue cheese until smooth; mix in bacon. Spread about 1/4 cup mixture on each slice of bread and top with a slice of Swiss cheese. (See Note.)





Place on baking sheet and broil, 4 inches from heat source, until cheese is melted, about 1 minute. Top each with roast beef, onion and pickle and serve open-faced.





Makes 6 servings.





Note: Sandwiches can be prepared to this point and refrigerated three hours before serving.

Marinated Mushrooms is a wonderful make-ahead recipe that's perfect on its own, part of an antipasto platter, or as an addition to a simple green salad.


Prep Time: 25 minutes


Cook Time: 15 minutes


Ingredients:


3 cups water


3 tablespoons lemon juice


1 teaspoon salt


2 (8-ounce) packages firm button mushrooms, trimmed


1/2 cup white wine vinegar


1 tablespoon sugar


2 bay leaves


2 teaspoons coriander seeds


1/2 teaspoon peppercorns


1/4 teaspoon celery seeds


1/2 teaspoon seasoned salt


1/2 teaspoon crushed red pepper flakes


2 teaspoons dried thyme leaves


4 cloves garlic, minced


1/2 cup minced red onion


1/2 cup extra-virgin olive oil


Preparation:


In large saucepan, combine water, lemon juice, and salt and bring to a boil. Add mushrooms; bring back to a boil, then reduce heat and simmer for 4-5 minutes until tender. Drain mushrooms, reserving 3/4 cup of the liquid.





In same saucepan, combine reserved mushroom liquid, sugar, and vinegar. Tie the bay leaves, coriander, peppercorns, and celery seeds in a small square of cheesecloth and add to the saucepan. Add seasoned salt, pepper, thyme, and garlic and bring to a simmer. Simmer for 5-6 minutes.





Add red onion and mushrooms to saucepan and remove from heat. Let stand, uncovered, for 30 minutes. Then remove and discard cheesecloth bundle. Place mushrooms and liquid in a 4-6 cup heatproof container. Add olive oil and stir gently. Cover and refrigerate for 3 days before using, shaking the container occasionally. Store in refrigerator up to 5 days longer.





Let mushrooms stand at room temperature for 30 minutes before serving.

Baked Brie with Curried Chutney


Chutney is blended with curry powder and thickened, then served over Brie softened in the oven. What could be better?


Prep Time: 5 minutes


Cook Time: 10 minutes


Ingredients:


1 (8-ounce) round Brie or Camembert Cheese


1/2 cup mango chutney


2 tablespoons dried currants


2 teaspoons cornstarch


2 teaspoons curry powder


Preparation:


Preheat oven to 350 degrees F. Place cheese on cookie sheet and set aside.


In small heavy saucepan, combine chutney and currants. In small bowl, combine cornstarch, curry powder, and water and blend well until smooth. Stir into chutney mixture. Cook over low heat, stirring constantly, until mixture comes to a boil and thickens. Set aside to cool while Brie is baking.





Bake cheese for 10-15 minutes or until softened. Remove to serving plate and top with chutney mixture. Serve with toasted baguette slices, crackers, and pear slices.

Crockpot Little Sausages


This is a perfect recipe for any appetizer buffet, and one that people actually expect!


Prep Time: 20 minutes


Cook Time: 3 hours,


Ingredients:


2 pkgs. little smokies or little vienna sausages


1/2 cup chopped onion


1 cup apple jelly


1 cup chili sauce


1/2 cup ketchup


Preparation:


In nonstick skillet, brown sausages slightly. Remove from skillet and place in 3-4 quart slow cooker. Cook onion in skillet over medium heat until crisp tender. Add apple jelly, chili sauce, and ketchup to skillet and heat, stirring, until blended. Pour over sausages in slow cooker, cover, and cook on low for 2-3 hours. Serve from crockpot. Serves 8-10

Baked Brie with Peaches


You could use just about any flavor of preserves in this simple and delicious recipe.


Prep Time: 10 minutes


Cook Time: 10 minutes


Ingredients:


8 oz. round Brie cheese


2 Tbsp. raspberry preserves


1 cup diced peeled peaches


1 Tbsp. brown sugar


Preparation:


Preheat oven to 400 degrees. Place Brie in small shallow baking dish. Spread preserves evenly over cheese and top with peaches. Sprinkle with brown sugar. Bake for 10-12 minutes or until cheese softens. Serve with crackers and french bread slices. Serves 8-10

Shrimp Puffs


Try these delicious little appetizers using frozen or canned crabmeat too! I always have a batch of these on hand in the freezer for holiday entertaining.


Prep Time: 30 minutes


Cook Time: 20 minutes


Ingredients:


6 slices firm white sandwich bread (I use Pepperidge Farm)


1 lb. frozen, uncooked shrimp, deveined and shelled


2 cloves garlic, minced


1 Tbsp. butter


1 Tbsp. olive oil


1-1/2 cups shredded Gruyere or Havarti cheese


1 tsp. lemon zest


1 tsp. dried dill weed


dash pepper


3/4 cup mayonnaise


Preparation:


Preheat oven to 300 degrees F. Using small cookie cutter, cut out four rounds from each slice of bread. Place on cookie sheet and bake in oven for 10-15 minutes or until bread is crisp and dry, turning bread rounds over once halfway through baking time. Cool on wire rack.


Heat butter and olive oil in heavy skillet and cook garlic and shrimp just until shrimp curl and turn pink. Remove from heat and set aside for 10-15 minutes to cool slightly.





In large bowl, combine cheese, lemon zest, dill, mayonnaise, and pepper. Finely chop shrimp and add to cheese mixture.





Top bread rounds with shrimp mixture, mounding and smoothing the shrimp. Freeze in single layer on baking sheet, then store in freezer container in single layer.





When ready to eat, bake puffs, frozen, in preheated 400 degree oven for 10-13 minutes until golden brown and bubbly. Serve immediately. You can also bake the puffs without freezing them, in a 400 degrees F oven for 8-9 minutes. Makes 24 appetizers
Here's a couple of my favorite appetizers:


1) buy some deli thin sliced corned beef and thin slices swiss cheese. Lay a piece of beef flat, spread with mustard, top with cheese. roll up to make a roll and use toothpick to secure. easy and yummy





2) Spread an 8 oz. package cream cheese out on to a plate, like you were icing a cake. Add a cup of cocktail sauce and spread evenly. top with crab meat or shrimp. Serve with crackers. Yummy
Ingredients


2 (8ounce)packages Pillsbury Refrigerated Crescent Dinner Rolls


1 (12ounce)jar of mancini sweet roasted red peppers(You can use Cento or Progresso or whatever other brand is available)


1/4 lb baked ham


1/4 lb swiss cheese


1/4 lb genoa salami


1/4 lb provolone cheese


1/4 lb pepperoni


3 eggs


2 tablespoons grated parmesan cheese


Directions





Preheat oven to 350.


In a 9 x 13 ungreased baking pan, unroll one package of crescent rolls, sealing perforations and press dough to edges of pan.


Top the crescent roll dough with the ham, swiss, salami, provolone and the pepperoni.


Slice the roasted peppers into strips, and lay them on top of the pepperoni layer.


Beat 2 eggs with the Parmesan cheese, and pour over the roasted peppers.


Top with the second package of crescent rolls, again sealing the perforations as best as you can and pressing dough to the edges of the pan.


Beat the last egg and spread on top of the dough.


Cover with foil and bake for 30 minutes.


Remove foil and bake until golden brown, 10-15 minutes more.


Let sit at least 10 minutes before cutting into 2 inch squares.


Serve warm.
Chalupa Bar:


-Crispy Red Corn Chalupa Tortillas


-Spicy Ground Beef (Chili powder, Cumin, Garlic, Salt/ Pepper and a bit of water. Cover and simmer on low heat.


-Spicy Shredded Chicken ...Boil Chicken and cool. Shred and blend in spices. (Garlic powder, Salt/Pepper/Chili Powder).


-Refried Beans


-Diced Onions


-Diced tomatoes


-Chopped Cilantro


-Sliced Jalapenos


-Sour Creme


-Salsa


-Shredded Lettuce


-Shredded Red Cabbage


-Shredded Cheddar


Serve Buffet Style...yum

Coconut Shrimp

INGREDIENTS


4 medium potatoes, peeled and sliced paper-thin


3 tablespoons salt


1 quart oil for deep frying


DIRECTIONS


Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again.


Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in small batches. Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried. Season with additional salt if desired.
Theres this cold salad my mom always makes, its super easy, and you cant go wrong w/ it. Everytime she makes it, people always ask what she puts in it.


*First bring the chicken to a boil. (A whole chicken) (Dont throw away the broth, you might want to add some at the end)


*Then in a separate pot, boil a bag of cut peas and carrots


(remove the water from the peas and carrots, before they get soggy)


*Boil potatoes (about 8-9) I have a big family and make up to 10-12 servings


*Now that you have boiled the chicken and peas, cut the chicken in little shreds, and mash all the potatoes. Mix the chicken and potato,


*Add mayonaise, about 5 spoons, depending on how much you like. Keep tasting it, thats how I measure ;)


*Finally add the peas and carrots, mix it up a bit


and there you go. Chicken salad.


*Oh and add some salt and chicken broth for more flavor.


Eat with Crackers. (saltines)


Or with Tostadas.





YOu can also make little subs. Its very inexpensive and everyone likes them. You can have turkey, ham, and tuna. SEt it up in a way that they can choose and pick what they want on their little sub.

1 loaf French bread or Italian bread, unsliced


1/2 cup butter or margarine, softened


1/4 teaspoon garlic powder

4 ounces shredded mozzarella cheese





1) Preheat oven to 375掳F.

SERVES 8 -12 , 1 (12 inch) pizza


1 (8 ounce) package refrigerated crescent dinner rolls


1 egg, slightly beaten


1 (8 ounce) carton French onion dip


1/2 cup broccoli, chopped


1/2 cup cauliflower, chopped


1/2 cup chopped tomatoes


1/2 cup carrots, chopped


1 green onion, chopped


1/4 cup sliced ripe olives


4 hard-boiled eggs, chopped


1/2 cup mozzarella cheese, shredded


1/2 cup sharp cheddar cheese, shredded





Preheat oven to 375 degrees.


Separate dough into triangles; place on a greased 12 inch pizza pan. To form crust, firmly press perforations together to seal and pat into shape. Brush with beaten egg.





Bake until golden brown, about 8-10 minutes. Cool crust completely.





Spread dip onto cool crust. Then sprinkle with broccoli, cauliflower, carrots, tomatoes, green onions, olive and eggs.


Top with cheeses.





Cut into wedges to serve.





Quiche Lorraine Tartlets Recipe #293518


SERVES 24


1 (15 ounce) package refrigerated pie crusts, softened according to package directions (2 crusts)


2 eggs


1/2 cup half-and-half


1/8 teaspoon salt


4 slices cooked bacon


1/2 medium red bell pepper


2 tablespoons finely chopped fresh chives or green onions


1/2 cup grated swiss cheese (2 oz.)


12 grape tomatoes


fresh coarse ground black pepper





Preheat oven to 400 degrees. Unroll one pic crust onto lightly floured surface. Spacing closely together, cut 12 disks from crust using outer tube of the Measure All-Cup (from Pampered Chef), nine around outside edge and three in center. Press disks into wells of mini-muffin pan and ruffle edges.





Whisk eggs, half and half and salt. Set aside.


Finely chop bacon and bell pepper; squeeze excess moisture from bell pepper with paper towels. Combine bacon, bell pepper, chives and swiss cheese and mix well.


Pour egg mixture evenly into tart shells; sprinkle evenly with cheese mixture. Cut tomatoes in half crosswise. Press one tomato half, cut side up, into center of each tartlet. Sprinkle with black pepper.





Bake 14-16 minutes or until egg mixture is set and crusts are golden brown. Remove tartlets to serving platter and sprinkle with add'l chopped chives, if desired.





Bacon Wrapped Jalapeno Poppers Recipe #105670


Serves 50


25 fresh jalapeno peppers


14-16 ounces cream cheese


2 cups shredded cheddar cheese


2 (16 ounce) packages bacon





Cut stems off of peppers and cut them all in half longways.


Remove seeds from peppers.





Fill each pepper with cream cheese and sprinkle cheddar cheese on top. Wrap 1/2 slice of bacon around each pepper half.





Place on baking sheets and place in 450 degree oven for 10 to 15 minutes or until bacon is fully cooked.





Remove and serve when cooled.





Chicken Garlic Bites Recipe #27733





SERVES 16


2 boneless skinless chicken breasts, cut into bite size pieces


1/2 cup olive oil


4 cloves garlic, minced


1/4 teaspoon pepper


1/2 cup breadcrumbs


1/4 teaspoon cayenne pepper





Place chicken in shallow dish.





In small bowl, mix olive oil, garlic, and black pepper. Pour over chicken. Cover and marinate 30 minutes. After 30 minutes, drain.





Preheat oven to 475掳F.





Mix bread crumbs and cayenne. Coat chicken. Arrange in a single layer on cookie sheet.





Bake 10 minutes or until brown.





Modify amounts to suit your group size on most of these recipes.

INGREDIENTS


2 tablespoons vegetable oil


1 skinless, boneless chicken breast half


2 tablespoons minced green onion


2 tablespoons minced red bell pepper


1/3 cup frozen corn kernels


1/4 cup black beans, rinsed and drained


2 tablespoons frozen chopped spinach, thawed and drained


2 tablespoons diced jalapeno peppers


1/2 tablespoon minced fresh parsley


1/2 teaspoon ground cumin


1/2 teaspoon chili powder


1/3 teaspoon salt


1 pinch ground cayenne pepper


3/4 cup shredded Monterey Jack cheese


5 (6 inch) flour tortillas


1 quart oil for deep frying





DIRECTIONS


Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.


Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.


Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.


Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.


Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.


In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.

buffalo chicken fingers





INGREDIENTS


4 skinless, boneless chicken breast halves - cut into finger-sized pieces


1/4 cup all-purpose flour


1 teaspoon garlic powder


1 teaspoon cayenne pepper


1/2 teaspoon salt


3/4 cup bread crumbs


2 egg whites, beaten


1 tablespoon water








DIRECTIONS


Preheat oven to 400 degrees F (205 degrees C). Coat a baking sheet with a nonstick spray.


In a bag, mix together flour, 1/2 teaspoon garlic powder, 1/2 teaspoon cayenne pepper, and 1/4 teaspoon salt. On a plate, mix the bread crumbs with the rest of the garlic powder, cayenne pepper, and salt.


Shake the chicken pieces with the seasoned flour. Beat egg whites with 1 tablespoon water, and place egg mixture in a shallow dish or bowl. Dip seasoned chicken in egg mixture, then roll in the seasoned bread crumb mixture. Place on prepared baking sheet.


Bake for about 8 minutes in the preheated oven. Use tongs to turn pieces over. Bake 8 minutes longer, or until chicken juices run clear.

Here are just a few Ive used more times in a pinch for my Catereing jobs where the Client wants to add something at the last min. There where no complaints of leftovers when we make them so you know they are good. Have fun at your gathering.
cream cheese softened


finely chopped jalepenos


finely chopped onion


flour tortillas


mix cream cheese, onion and jalepeno all together


spread onto flour tortilla roll up refirdge for about 45 min


then cut into bite size rolls each flour tortilla should make about 5 or 6 bite size.
Put a bunch of lil smokey's in a crock pot, cover with BBQ sauce and heat till hot and then turn down to keep warm. Serve with crackers and cheese. If you don't want to buy lil smokeys you can also slice polish sausage up. Its cheaper that way but still very good.





spread cream cheese on a flour tortilla, line with ham, roll up with a green onion in the middle and slice in rings.





Either buy or assemble a veggy tray with ranch dip.





Finger sandwiches or a lunch meat tray with cheese and crackers are good as well.
Antipasto is the best for a house party. Just put layers of cheeses and Italian cold cuts together on a plate.





Different Types of Crostini's. Buy a baguette from the supermarket. Slice them and brush with olive oil and lightly toast. Put what ever you want on them. Roasted Peppers and Cream Cheese, Saute some mushrooms and top with pecceriono cheese or the classic brusetta.





How about Pizza? Get some Boboli from the supermarket and top it with whatever you want and slice into small pieces.

I would do a warm spinach dip with tortilla chips (super easy)





I like the Lil Smokey idea.. those are always delicious!





Maybe some little finger sandwiches? Terriyaki meatballs?
