I want to raise some eco awareness (sort of a ';party for a cause';) using eco-friendly party decor, food, etc. but still very elegant and classy. This way guests will see that you don't have to sacrifice style to live green.

You should make your own appetizers using fresh organic ingredients. You can use organic/local fruits and vegetables and dairy products (such as cheeses or for use in dips). Using fresh, local ingredients will cut transportation of goods and fresh fruits and vegetables do not have any wasteful packaging (just bring a reusable bag to the market). Most grocers have an organic section now. I live in the Midwest and we have them here, so they are pretty common now because the Midwest is very resistant to the idea of ';green living';. You might be able to find some organic wines, or you could make cocktails using organic juices.
Any appetizer recipe can be made w/organic ingredients. If you do not want to cook, find a caterer that offers organic selections. You can also look for ready-made packaged appetizers, but this is not as ';green'; as making them yourself from fresh, local, organic ingredients.
