Spinach Deviled Eggs:
12 Hard cooked eggs
1/4 Cup Mayo
2 tablespoons vinegar
1 tablespoon butter or margarine, softened
1 tablespoon sugar
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 cup chopped spinach, thawed and squeezed dry
4 bacon strips, cooked and crumbled.
Sometimes I add minced water chestnuts.
Slice eggs in half lengthwise, remove yolks and set whites aside. In a small bow, mash yolks with fork. Stir in the mayo, vinegar, butter,sugar,pepper and salt. Add spinach and mix well. Stir in the bacon; spoon into egg whites.

Artichoke and Spinach Swirls
* 1 (17.3 ounce) package Pepperidge Farm庐 Puff Pastry
* 1/2 cup mayonnaise
* 1/2 cup grated Parmesan cheese
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
* 1/2 teaspoon ground black pepper
* 1 (10 ounce) package frozen chopped spinach, thawed and well drained
* 1 (14 ounce) can artichoke hearts, drained and chopped
1. Thaw the pastry sheets at room temperature for 40 minutes or until they're easy to handle. Heat the oven to 400 degrees F. Line a baking sheet with parchment paper.
2. Stir the mayonnaise, cheese, onion powder, garlic powder, black pepper, spinach and artichokes in a small bowl until the ingredients are mixed.
3. Unfold 1 pastry sheet on a lightly floured surface. With the short side facing you, spread half of the spinach mixture on the pastry to within 1-inch of the edges. Starting at the short sides, roll up like a jelly roll. Repeat with remaining pastry sheet and spinach mixture.
4. Cut each roll into 20 (1/2-inch) slices. Place 2 inches apart on prepared baking sheets.
5. Bake for 15 minutes or until golden. Remove from the baking sheet and cool slightly on a wire rack. Serve warm or at room temperature. Makes 40 pastries.

Best Guacamole
* 2 avocados
* 1/2 lemon, juiced
* 2 tablespoons chopped onion
* 1/2 teaspoon salt
* 2 tablespoons olive oil
1. Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt, and olive oil. Cover the bowl, and refrigerate for 1 hour before serving.

Chicago Dip
* 1 (10 ounce) package frozen chopped spinach, thawed and drained
* 1 cup sour cream
* 1 cup mayonnaise
* 3/4 cup chopped green onions
* 2 teaspoons dried parsley
* 1 teaspoon lemon juice
* 1/2 teaspoon seasoning salt
* 1 (1 pound) loaf round, crusty Italian bread
1. In a large mixing bowl, combine spinach, sour cream, mayonnaise, green onions, parsley, lemon juice, and salt. Mix until well blended, then refrigerate.
2. Cut a circle out of the top of the bread and scoop out the inside. Tear the inside into pieces for dipping. Spoon the dip into the center of the bread bowl and serve accompanied by the pieces of bread for dipping.

Hot Artichoke Spinach Dip
* 1 (14 ounce) can artichoke hearts, drained
* 1/3 cup grated Romano cheese
* 1/4 cup grated Parmesan cheese
* 1/2 teaspoon minced garlic
* 1 (10 ounce) package frozen chopped spinach, thawed and drained
* 1/3 cup heavy cream
* 1/2 cup sour cream
* 1 cup shredded mozzarella cheese
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. In a blender or food processor, place artichoke hearts, Romano cheese, Parmesan cheese and garlic . Pulse until chopped, but not ground. Set aside.
3. In a medium bowl, mix together spinach, heavy cream, sour cream and mozzarella cheese. Stir in artichoke mixture. Spoon into prepared baking dish.
4. Bake in the preheated oven for 20 to 25 minutes, or until cheese is melted and bubbly.

Warm Spinach Dip
* 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
* 4 ounces fat free cream cheese
* 1/2 cup shredded reduced-fat Cheddar cheese
* 1/2 cup reduced-fat sour cream
* 1 tablespoon spicy brown mustard
* 1 teaspoon minced garlic
* 3/4 teaspoon hot pepper sauce
* 1/4 teaspoon salt
* Assorted fresh vegetables
1. In a saucepan, combine the first eight ingredients. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 7-8 minutes or until cheese is melted, stirring occasionally. Serve warm with vegetables.
