Mexican layered dip-- just make it with whatever you have on hand. Some layer ideas
Refried beans mixed with salsa, ground beef seasoned with taco seasoning, black beans, lettuce, chopped tomatoes, sliced black olives, guacamole, sour cream, shredded Mexican or Monterey Jack cheese, etc.
Quesadillas-- any of these with salsa (optional) and choice of cheese (Monterey Jack and Mexican blend are my favorites).
Veggie quesadillas-- bell pepper, tomato, onion, black beans, mushrooms, zucchini, spinach, etc.
Bacon Avocado quesadillas-- diced bacon, avocado, mushrooms, tomato.
Chicken quesadillas-- chicken seasoned with taco seasoning, refried beans, green onion, fresh cilantro.
Greek quesadillas
1 small onion, chopped
2 tsp olive oil
2 cloves garlic, minced
1 (7 oz) package fresh baby spinach
4 oz crumbled feta cheese
3 oz softened cream cheese
1/2 cup ricotta cheese
1 tsp fresh lemon juice
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp ground black pepper
1/8 tsp grated nutmeg
4 tortillas (8 inches each)
2 tbsp butter
--Cook onion in the olive oil in a large skillet until tender, 5-6 minutes. Add the garlic and heat until fragrant. Add the spinach and cook several minutes until the spinach starts to wilt. Drain the spinach on paper towels and allow to cool. Mix feta, cream cheese, ricotta, lemon juice, ground cumin, salt and pepper until smooth. Add the spinach to mixture, and stir to combine. Spoon 1/2 of the mixture onto 2 tortillas and top with bare tortillas. Heat 1 tbsp butter in clean skillet and place one quesadilla in skillet. When underside begins to turn golden, flip quesadilla, and brown the other side. Repeat with remaining quesadilla. Cut quesadillas into 4-6 wedges.
Another idea is a block of cream cheese topped with jalapeno jelly served with crackers.
Or spread softened cream cheese straight onto a plate, top with a can of chili, and then 1-2 cups shredded cheese. Microwave 2-3 minutes or until shredded cheese is completely melted and dip is hot. Serve with tortilla chips.
Shortbread
2 cups flour
1/2 cup sugar
1 cup cold butter
--Combine flour and sugar. Cut in butter and mix until crumbly. Knead by hand for 7-8 minutes until a soft, smooth dough forms. Press into a 9x9 inch square pan and prick all over with a fork. Bake at 375 degrees for about 15 minutes or until golden. Cut into squares while still warm. *I like dipping half of each shortbread square into melted chocolate bark and then allowing to them to set on wax paper*
Dorito Dip
1 (10 oz) can sloppy joe mix
1 lb ground beef
1 (10 oz) can refried beans
2 (10 oz) cans cheddar cheese soup
1 (10 oz) can tomatoes
--Brown ground beef and drain well. Mix all ingredients well. Heat and serve with doritos or favorite tortilla chips.
Cheesecake Dip
3 ounces cream cheese, softened
2 tablespoons sugar
3 tablespoons low-fat milk
2 cups thawed whipped topping
1 teaspoon vanilla
--Beat cream cheese, sugar, and milk until smooth. Fold in whipped topping and vanilla. Serve with apple wedges, strawberries, graham crackers, vanilla wafers, cake cubes, etc.

Jar of Heinz chili sauce
1 lb. Krab (imitation crab) chopped up
1 8 oz package cream cheese, softened
Mix the chili sauce and chopped Krab. Chill.
Pour over the softened brick of cream cheese. Serve with crispy crackers or water biscuits.
cut up some carrots, celery, radishes, jicama, cherry tomatoes, cucumbers and buy a ready made dip in your grocery store.
I have a few no fails.
Take a cuke and halve it. Not an English cuke though. Then take a spoon and scoop out the seeds. Fill the hole with Alouette or any herbed cheese. Then sprinkle on crumbled bacon. I generally buy the already cooked and just crumble it on. Slice into about 1'; pieces.
Another no fail is baked pierogies. You can buy mini pierogies in the freezer section. Spray a cookie sheet with Pam, then put the pierogies on the sheet. Spray the tops with Pam and sprinkle with a little salt. Bake according to package directions. Serve with sour cream that you have seasoned with fresh chopped chives, salt and pepper.
The last sounds nasty, but it's really good. Spread two packages of softened cream cheese in the bottom of a baking dish. Top with a jar of salsa and bake at 350 for about 10 minutes. You just want it to get hot, not bubble, the cheese will curdle. Serve with tortilla chips.

Jezebel
1/2 jar of prepared horseradish (1 - 2 oz)
1 can dry mustard (1 1/2 oz)
1 (18 oz) jar pineapple preserves
1 (18 oz) jar apple jelly
1 tsp coarse ground pepper
Mix horseradish and dry mustard. Combine remaining ingredients. Pour the mixtures over an 8 oz. block of softened cream cheese. It's very pretty and exotic tasting.
Serve with wheat thins or a sturdy cracker.
Also good with ham on rye squares. Will keep in the refrigerator for a long time if not on the cream cheese.

1 8oz bottle hot sauce
1 8 oz jar grape jelly
mix all together on crockpot heat on low for 5 hrs
