I need an appetizer that uses mini phyllo cups... I was thinking something like curry chicken salad but already have chicken as one of the main courses. I would really like some type of a vegetable or cheese filling preferable without any meat (I guess I could use seafood but already have shrimp cocktail)and something that I do not have to serve warm. Please give me any suggestions... Also I am making this myself so I would like it to be something simple and not too expensive because it is for 50-65 people.

SPINACH PHYLOO CUPS
INGREDIENTS
1 egg, beaten
2 cloves garlic, finely minced
1 (8 ounce) package crumbled feta cheese
2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
3 (2.1 ounce) packages pre-baked mini phyllo dough shells
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Mix the egg, garlic, and feta in a large bowl. Stir in the spinach. Place the phyllo shells on flat baking sheets, and fill with the spinach mixture.
Bake in preheated oven until hot, 6 to 8 minutes.
This next recipe could easily be made and put into the cups, just make the filling.
PHYLLO TARTS WITH RICOTTA
INGREDIENTS
5 sheets phyllo dough
2 tablespoons unsalted butter, melted
1 cup low-fat ricotta cheese
1/4 cup white sugar
1 egg
1/2 teaspoon orange zest
1/2 teaspoon vanilla extract
1 pinch ground nutmeg
2 cups fresh raspberries
1 tablespoon confectioners' sugar for dusting
DIRECTIONS
Drain ricotta cheese in a sieve for 20 minutes; set aside.
Preheat oven to 350 degrees F (175 degrees C). Spray 6 3-inch loose-bottomed tart pans with nonfat cooking spray.
Leave phyllo sheets in a stack and use a ruler to trace 6 5-inch squares onto top sheet (3 squares across and 2 squares down). Using a sharp knife, cut along traced lines, through all 5 sheets of dough. Immediately line each tart pan with 5 sheets of dough, lightly brushing melted butter or margarine between each layer. Trim edges of dough.
In a medium mixing bowl, combine ricotta, sugar, egg, orange rind, vanilla extract, and nutmeg. Beat with electric mixer until smooth. Pour an equal amount of mixture into each tart pan.
Bake in preheated oven for 25 minutes, until golden brown. Cool tarts slightly, then arrange raspberries on top. To serve, remove tarts from pans and sprinkle with confectioners' sugar.Recipes for filling in mini phyllo cups? Need an appetizer served room temp or cold?

Lot's of things can go in phyllo cups, at room temp you may consider a mixture of olives, something like a tempenade, a chunk of brie with apricot jam, brie with sun dried tomatoes and garnished with basil leaf. Do a web search on the manufactures website, sometime they have great recipes.
