Years ago at an office Christmas party, an Indian (Asian) co-worker's wife brought a delicious appetizer that she said was made mostly of potatoes. It was a small, round fried patty and a bit spicy.
I would love to have a recipe for these appetizers. I have searched the Internet and many ethnic cookbooks but have yet to find anything that sounds like or resembles what she cooked.

Ingredients
Potatoes - 4 Medium sizes
Onion - 1 Medium size (finely chopped)
Peas - 1/4th cup
Green Chillies - 3 (finely chopped)
Little Coriander leaves
Mint leaves
2 tsp Red Chilli powder
Cornflour 1 tbsp.
Salt
Gram flour - 150gm.
Soda a pinch
Water - 1cup
Oil to deep fry
Method:
1. Potatoes boiled, peeled and finely mashed.
2. All ingredients except gram flour, soda and water put into mashed potatoes and mix well.
3. Make balls of even size. Make about 10-12.
4. Make batter with gram flour, soda, salt and water.
5. Heat oil to deep fry.
6. Dip every ball into batter and fry in hot oil on medium and low till crisp and light brown.
7. Drain it on kitchen paper.
8. Serve hot with Green and Tamarind Chutneys or Tomato Sauce.
It was probably ';Alu tikkis'; (Potato patties). It could have been ';Batata Vada'; (Bonda) also if it was deep fried with a batter.
Potato Tikkis
Ingredients :
2 to 3 potatoes
4 slices of bread
2 to 3 finely chopped green chillies
3 tbsp coriander leaves, chopped
Salt to taste
For the stuffing :
1 medium onion, chopped
1piece ginger, chopped
2 tsp chopped green chillies
1/2 tsp red chilli powder
1 tsp dhaniya powder
1 tsp jeera
1/2 tsp garam masala
1/2 tsp amchoor (mango powder)
Salt to taste
1 1/4 cups of boiled, shelled peas
2 tbsp oil for frying Method :
Boil, peel and mash the potatoes. Soak the bread in water, squueze the water %26amp; crumble finely over the potatoes.
Add salt, green chillies and chopped dhaniya Mix well and make a smooth dough. Set aside.
Now prepare the stuffing :
Fry the onions in the oil till light brown. Mix in the ginger, green chillies, powders and salt to taste. Fry for 1/2 a minute and add the boiled green peas. Mix well and remove.
Shape the potato dough into rounds, put the stuffing into the center of each round and cover with more dough. Smoothen into rounds and shallow fry till brown and crisp. Serve hot with tomato ketchup.
Batata Vada
Ingredients :
5 to 6 potatoes
3-4 onions, chopped finely
2 cups besan
3-4 green chillies
A small piece ginger
3 cloves garlic
Sugar to taste
Juice of one lime
1 bunch dhaniya, chopped
Salt to taste
Oil for deep frying
1 tsp rai
1 tsp haldi
1/2 tsp red chilli powder
1 tsp jeera
Pinch of urad dal
A pinch of soda-bi carb (baking soda) Method :
Pressure cook the potatoes till soft. Peel and mash. Set aside.
Blend together the green chillies, garlic and ginger to a fine paste. Mix together the potato, onions, ginger/garlic/chilli paste, dhaniya, sugar, lime juice and salt to taste.
Heat a little oil and fry rai, jeera, urad dal and curry leaves. When the mustard crackles, remove from heat and add to the potato mixture. Mix well.
Make a smooth batter with the bengal gram flour, salt to taste, red chilli powder and haldi Add a teaspoon of hot oil when making the batter. Let the batter remain thick.
Divide the potato mixture into small balls Dip each ball in the batter and deep fry till golden brown in color. Serve hot with chutney/ketchup.

Pastry
1 cup all-purpose flour
2 tablespoons vegetable oil
Filling
2 large potatoes(boiled)
1 onion, chopped
2 green chilies, very finely chopped
3 tablespoons oil
1/2 teaspoon ginger, grated
1/2 teaspoon garlic, crushed
coriander seeds
1 tablespoon cilantro, finely chopped
1/2 lemon, juice of
1/2 teaspoon turmeric
1/2 teaspoon garam masala
1/2 teaspoon red chili powder
salt
Mix together the flour, oil and salt.
Add a little water, until mixture becomes crumbly.
Keep adding water, kneading the mixture till it becomes a soft pliable dough.
Cover with a moist cloth and set aside for 20 minutes.
Beat dough on a work surface and knead again.
Cover and set aside.
FILLING.
Heat 3 tbsp oil.
Add ginger, garlic, green chillies and few corriander seeds.
Stir fry for 1 minute, add onions and saute till light brown.
Add cilantro (fresh coriander), lemon juice, turmeric, red chilli, salt and garam masala.
Stir fry for 2 minutes.
Add potatoes.
Stir fry for 2 minutes.
Set aside and allow to cool.
Divide dough into 10 equal portions.
Use a rolling pin, roll a piece of dough into a 5'; oval.
Cut into 2 halves.
Run a moist finger along the diameter.
Roll around finger to make a cone.
Place a tablespoon of the filling into the cone.
Seal the third side using a moist finger.
Deep fry the samosas on low to medium heat until light brown.
Serve with tomato sauce or any chutney you love.
